Humanitarian Food Processing – Dehydration
We decided to maximize our donations and avoid food waste through dehydration. It is an ancient method of preserving food for long periods of time.
The objective of the project is to distribute dehydrated products to various developing countries, as well as to homeless people. These products can also be used in an emergency in our country. This program allows us to collaborate with vulnerable people, the mentally challenged and to involve newcomers to our country as well as seniors in the project.
One of the main reasons that fruit and vegetables spoil is water. Dehydration makes it possible to extract on average 85% of the liquid contained in the products and thus to limit any microbial development.
The nutritional values are fixed in the vegetable or fruit at the time of extraction and remain stable.
Dehydrated products represent on average 15% of the initial weight and mass and can be kept for several years.
Dehydration promotes the consumption of fruits and vegetables all year round, while respecting the seasonality of production.
